Recipe Name: Bottle-gourd ( Sorakkai ) Uthappam

Ingredients:
Par-boiled rice (upadibiyyam) - 1 cup Channa Dhal - 1/2 cup Grated bottle-gourd - 2 cups Salt - to taste Coriander - nicely chopped curry leaves - 5 to 10 (nicely chopped) For tempering: Mustard - 1/2 tsp jeera - 1/2 tsp urad dhal - 1/2 tsp Channa dhal - 1/2 tsp dry red chili - according to taste
Procedure:
Soak the rice and channa dhal separately for 8 hrs. just before making the uthappam grind both of them separately (do not ferment) and mix them together.To it add the grated bottle gourd. Add salt. For Tempering: Heat oil in a pan then add mustard, jeera ,urad dhal, channa dhal,dry red chilli and curry leaves. Add the tempered ingredients and finely chopped coriander and curry leaves to the batter. Pour like uthappam and roast till golden brown and serve them with any kind of onion chutney. this is a very tasty Tiffen during summer as the bottle-gourd is a coolant and has a lot of water content in it. optional: instead of bottle gourd other water content vegetables like white pumpkin, chow-chow can also be used. This is highly nutritious and very good for our health
